- One popular recipe that you can try with bujji chillies is Mirchi Bajji, also known as Mirapakaya Bajji or Milagai Bajji.
- It is a well-known street food found in Andhra Pradesh and Karnataka in South India. These are simply batter-fried stuffed green chilies which are spot on with flavors and textures.
- To make Mirchi Bajji, you will need long green chilis, besan (gram flour), rice flour, ajwain, baking soda, salt, and water.
- First, take the long green chilis and slit them at the center to remove the seeds. Then prepare the bajji batter by mixing besan, rice flour, ajwain, baking soda, and salt in a large mixing bowl. Add water to the mixture and mix well until everything is combined.
- Dip the chilis in the batter and deep fry them until they are golden brown. There are many variations of Mirchi Bajji enjoyed all over India. In Tamil Nadu it is known as Milagai bajji & in the rest of India they are well known as Mirchi pakora and Mirchi vada/bada.
- You can also stuff the chilies with spiced potatoes to make Rajasthani Mirchi vada/pakora. Enjoy your Mirchi Bajji with a cup of tea or coffee!
